Cloves are the dried flower buds from a tropical evergreen tree, which are gathered, dried and powdered.
A traditional spice used in fruit cakes, puddings and biscuits. When poaching fruit, add to the syrup. Use sparingly to flavour sweet potato, pumpkin and carrots.
