Lemon Juice

Olive Oil

Prawns
125 gm
or Crabmeat - Chopped 
Potato(es)

Boiled and Finely Chopped

Preparation

  1. Rinse salmon under cold running water and pat dry (inside and out).
  2. Sprinkle cavity with MasterFoods Sea Salt, MasterFoods Black Peppercorns Ground and lemon juice.
  3. To make SUMMER GARDEN STUFFING - Combine all remaining ingredients in a bowl.
  4. Toss gently to distribute evenly.
  5. Stuff salmon cavity lightly, skewer and lace closed.
  6. Rub salmon generously with softened butter.
  7. Tear off a piece of aluminium foil (as long as and twice the width of the salmon).
  8. Oil one side.
  9. Use skewer to punch a dozen holes through foil.
  10. On barbecue place foil flat on grill (oiled side up) and place salmon on foil.
  11. Measure the thickest point and allow total cooking time of 12-15 minutes per 2.5cm.
  12. Halfway through allocated cooking time gather long edges of foil together to form a handle.
  13. Grip the handle and flip salmon.
  14. Re-open foil for rest of cooking time.
  15. Fork-test for "doneness" along both sides of the backbone at the thickest point.
  16. Juices should run clear and flesh should be opaque.
