Lamb Cutlets

Preparation

  1. CAJUN BUTTER - Beat the butter to soften and mix in 1&1/2 teaspoons of MasterFoods Cajun Seasoning.
  2. Place butter along the centre of a piece of plastic wrap or greaseproof paper to 1cm thickness.
  3. Fold plastic wrap over the butter then roll up.
  4. Smooth into a sausage shape and twist ends.
  5. Refrigerate to firm.
  6. Trim the cutlets if necessary and snip the membrane at the side to prevent curling.
  7. Flatten slightly with the side of a meat mallet.
  8. Mix together MasterFoods Cajun Seasoning and olive oil and rub mixture well into both sides of the cutlets.
  9. Place a single layer onto a tray, cover and stand for 20 minutes at room temperature or longer.
  10. Heat the barbecue or electric grill to high.
  11. Place a sheet of baking paper on the grill bars, making a few slashes between the bars for ventilation.
  12. Place cutlets on grill and cook for 3 minutes each side for medium and 4 minutes for well-done.
  13. When cooked, transfer to a serving plate and top each cutlet with a round of Cajun Butter.
  14. Serve immediately.
