Small Baby English Spinach Leaves

Butter Beans

drained & rinsed 
Shallots (or Spring Onions)
3 stem(s)
thinly sliced 
Pecan Nuts
1/4 cup(s)
roughly chopped

Olive Oil
1 1/2 tbsp
Extra Virgin (Extra) 
Red Wine Vinegar

Preparation

  1. Drain skewers. Place beef in a bowl. Add 2 teaspoons of olive oil, and MasterFoods Cajun Seasoningand rub well into the beef. Thread the beef onto the bamboo skewers. Set aside.
  2. Combine in a bowl the spinach, beans, shallots and pecans then gently toss. Finely grate 1 teaspoonof orange rind. Remove the remaining rind from the orange and segment into pieces. Add orange to the salad.
  3. Combine remaining oil, orange rind and vinegar in a covered container and shake well. Season dressing to taste and pour over salad.
  4. Sear and cook beef on a pre-heated lightly oiled BBQ plate or grill over a medium heat for approx. 10 minutes turning occasionally until done to the desired tenderness. Serve with salad.
