Preparation

  1. Heat oil in a large saucepan. Add chicken and pumpkin and saute until brown. Add rice and stir to coat the grains with oil.
  2. Add wine and marinade and stir until the liquid evaporates. Gradually add stock, stirring continuously until liquid evaporates and all stock is used.
  3. Stir through parmesan and remove from heat. Cover and stand for 5 minutes.
  4. Serve topped with parsley and a squeeze of lemon juice.
