Preparation

  1. Combine the lamb chops and marinade in a large bowl, cover with cling film, and set aside to marinate in the fridge for up to 2 hours.
  2. Mix the tomatoes, artichokes, eggplant, capsicum, onion, garlic, dried thyme, chilli (if using) and pasta sauce in a large heavy saucepan and set over a medium heat. Bring to a simmer then reduce heat to low. Cook for 10 minutes then fold in the parsley and lemon juice. Season with salt and pepper a
  3. Arrange the chops on a hot ribbed griddle or barbecue grill and cook for 2 minutes, then rotate 45° and cook for further 2 minutes. Turn the lamb chops over and repeat on the reverse side. The chops will be cooked medium, but for a well-done chop add 2 minutes each side. Serve on a bed of ratatouill
