Rolled Beef Roast With Pepper And Garlic Sauce

Preparation

  1. Preheat oven to 220°C. Beat the rump steaks with a mallet until ½ cm thick and tender. Lay them overlapping on a chopping board. Arrange the sausage meat on one edge of the steaks, then roll up tightly. Tie in place with butchers’ twine.
  2. Rub the beef with butter then place in a roasting pan. Bake for 35-40 minutes, turning often.
  3. Meanwhile, sauté the onions and garlic in olive oil in a large heavy frying pan set over a medium heat. Cook for 5 minutes, until softened. Pour in the port and finishing sauce, bring to a simmer then set aside.
  4. Carve the roast and smother with sauce. Serve with a Waldorf salad.
