Preparation
- Preheat the oven to 150°C (no fan). Brush a large baking tray with some oil and line with a piece of baking paper. Brush with oil and sift over a little cornflour. Mark a 23cm circle on the paper (using a cake tin or bowl).
- Beat the egg whites in a large bowl on high speed with an electric mixer until soft peaks form.
- Add the sugar gradually, beating well between additions. Add the mixed spice, vinegar and cornflour and beat well.
- Spread over the paper circle. Reduce the oven heat to 120°C and bake the pavlova for 1½ hours or until crisp and dry on the outside.Turn the oven off, leave with the door ajar and until cool. Carefully lift onto a serving plate.
