Preparation

  1. Preheat the oven to 150°C (no fan). Brush a large baking tray with some oil and line with a piece of baking paper. Brush with oil and sift over a little cornflour. Mark a 23cm circle on the paper (using a cake tin or bowl).
  2. Beat the egg whites in a large bowl on high speed with an electric mixer until soft peaks form.
  3. Add the sugar gradually, beating well between additions. Add the mixed spice, vinegar and cornflour and beat well.
  4. Spread over the paper circle. Reduce the oven heat to 120°C and bake the pavlova for 1½ hours or until crisp and dry on the outside.Turn the oven off, leave with the door ajar and until cool. Carefully lift onto a serving plate.
