Plain Flour (Sifted)
1 1/2 tbsp
 
Milk
250 ml
 
MasterFoods German Mustard
2 tsp
 
MasterFoods Wholegrain Mustard
1 tsp
 
Cream
1 ml
 
Parmesan Cheese
2 tbsp
Grated 
Breadcrumbs
65 gm
Stale 
MasterFoods Chives Chopped
1 tbsp
 
Lemon Rind
1/2 tsp
 
Butter
15 gm
Melted 

Preparation

  1. Remove flesh from tails and chop flesh into bite-sized pieces.
  2. Add lobster shells to large saucepan of boiling water.
  3. Cook for 1 minute or until shells change colour.
  4. Drain shells, rinse under cold water and dry.
  5. Melt butter in saucepan.
  6. Stir in flour and stir over moderate heat for 1 minute.
  7. Remove from heat and gradually add milk, stirring constantly.
  8. Cook until mixture boils and thickens.
  9. Stir in MasterFoods Mustards and lobster flesh.
  10. Cook over medium heat for about 2 minutes or until lobster is cooked.
  11. Remove from heat and stir in cream.
  12. Spoon mixture into lobster shells and sprinkle with crunchy topping.
  13. Grill until lightly browned.
  14. CRUNCHY TOPPING - Combine parmesan cheese, breadcrumbs, MasterFoods Chopped Chives, lemon rind and melted butter in a small bowl.
