Ingredients
  • 1/2 tsp Baking Powder
  • 250 gm Brazil Nuts
  • 1/2 cup(s) Brown Sugar
  • 2 whole Egg(s)
  • 750 gm Glaced FruitChopped
  • 1 tsp Masterfoods® Nutmeg Ground
  • 1/2 cup(s) Plain Flour (Sifted)
  • 1.5 tsp Rum
  • 1 pinch Salt
  • 90 gm Unsalted Butter

Method
  1. Place in oven and allow to cook for 1 1/2 hours.
  2. Preheat oven to 150°C.
  3. Sift flour, baking powder and salt together.
  4. In a separate bowl beat eggs until light and fluffy.
  5. Add brown sugar, rum, butter and MasterFoods® Nutmeg Ground and beat until smooth.
  6. Add fruit, brazil nuts and flour mixture. Stir until smooth.
  7. Spoon mixture into lightly oiled log tin - 23x13cm.
