  • 1/2 cup(s) Apple Juice
  • 6 tsp Baking Powder
  • 3 whole Egg(s)
  • 6 whole Granny Smith Apples
  • 1/2 cup(s) Grapeseed Oil
  • 1/4 cup(s) Lemon Juice
  • 1 whole Lemon Rindfrom 1 lemon
  • 2 tsp Masterfoods® Cinnamon Ground
  • 1 tsp Masterfoods Mixed Spice
  • 2 cup(s) Oat Bran
  • 3/4 cup(s) Orange Juice
  • 1 cup(s) Sultanas
  • 2 cup(s) Water
  • 2 cup(s) Wholemeal Flour

Method
  1. Preheat oven to 180°C.
  2. Place the oat bran in a large bowl.
  3. Combine wholemeal flour, baking powder, MasterFoods® Cinnamon Ground and MasterFoods Mixed Spice.
  4. Sift over the oat bran.
  5. Peel, core and dice apples and cover with boiling water.
  6. Leave to stand for 5 minutes then drain liquid.
  7. Add apples, sultanas and lemon rind to flour and oat mixture, mix well.
  8. Combine apple juice, orange juice, lemon juice and grapeseed oil then stir into the flour and apple mixture.
  9. Beat egg whites till soft peaks appear then gently fold into the mixture.
  10. Spoon into lightly oiled and floured muffin tray.
  11. Bake in oven for 25-30 minutes.
  12. Serve warm or cold with natural yoghurt.
