Beef With Red Wine Oregano

Beef with Red Wine & Oregano

  1. Preheat oven to 200'C
  2. Heat the oil in a frying pan over medium heat. Cook the spring onion for 4-5 minutes or until golden. Remove and set aside.
  3. Combine the butter and mustard. Spread over the beef and brown over high heat for 2-3 minutes (be careful as the mustard seeds spit).Remove and set aside.
  4. Add the garlic and wine and cook until reduced a little. Add the beef stock, tomato paste and oregano. Bring to the boil and simmer for 2-3 minutes.
  5. Place the beef and spring onion in a ceramic baking dish. Pour the red wine sauce over. Cover with foil and bake for 40-45 minutes or until cooked to your liking.
  6. Cut the beef into slices and serve with spring onion, sauce and roasted or steamed vegetables.
