Zesty Lemon Risotto

  • 1/2 cup(s) Basil (Fresh)Shredded
  • 1/2 whole Leeks
  • 1 whole Lemon(s)
  • 1 tsp Masterfoods® Garlic
  • 1 tsp Olive Oil
  • 1/4 cup(s) Parmesan CheeseRoughly Grated
  • 1 cup(s) Rice (Arborio)
  • 2 portion(s) Vegetable Stock
  • 2 cup(s) WaterHot
  • 1 cup(s) White Wine
Vegetable Stock,Water,MasterFoods Freshly Crushed Garlic,Leeks,Olive Oil,Rice (Arborio),White Wine,Lemon(s),Basil (Fresh),Parmesan Cheese ,
  1. Mix Vegetable Concentrated Liquid Stock with hot water and keep warm in a pot.
  2. In pot, saute MasterFoods Freshly Crushed Garlic, leek and olive oil.
  3. Add rice.
  4. Cook briefly then pour in white wine.
  5. Turn the heat up to high.
  6. Pour in half a cup of the warm vegetable stock.
  7. Stir constantly until the stock is absorbed.
  8. Repeat until all the stock is used and the rice is creamy.
  9. Stir in the juice of half a lemon, a generous handful of basil and some parmesan.
  10. Garnish with lemon zest.
