2 sachets (80 g each) MasterFoods™ Schnitzel Mix – Garlic and Herb
2 cups (1000 ml, 16 fl oz.) olive oil
2 cups (400 g) chopped tomatoes
1 cup (150 g) chopped onion
2 tbsp MasterFoods™ Minced Garlic
1 tsp MasterFoods™ Chilli Flakes
2 tsp MasterFoods™ Parsley
4 slices or 2 cups (1/2 cup each parma) (470 g) cheddar cheese
Cut the chicken breast down the side of the fillet, and open out to double. Get some greaseproof paper and place on top of the fillet and bash until thin. Coat the fillet in flour then the whisked egg, then cover all over, with the MasterFoods™ Schnitzel Mix. Pan fry in hot oil till crispy.
Make a sauce by pan-frying the Tomatoes, Onions, MasterFoods™ Minced Garlic, Parsley and Chilli. Get a potato masher and mash down to make smoother.
Pour the sauce over the crumbed chicken, and top with the sliced or grated cheese.
Grill till bubbly and hot. Serve with sprigs of parsley, a crunchy salad or spaghetti with the same tomato sauce.
