The leaf of a plant that is used in cooking is known as a herb. Any other part of the plant, which are often dried, including buds (cloves), bark (cinnamon), roots (ginger), berries (peppercorns), aromatic seeds (cumin) or the stigma of a flower (saffron) are all spices.
