Chipotle Chicken Tacos
Serves 2-4
WHAT YOU’LL NEED: • 500 g lean Chicken Breast • Canola Oil • 1 tbsp MasterFoods™ My Muscle Chef Chipotle Spice Blend, plus additional for sprinkling • 200 g Red Capsicum, thinly sliced • ¼ head Red Cabbage (200 g), thinly shredded • 420 g can No Added Salt Black Beans, rinsed and drained • 4 tbsp low fat Sour Cream • 4-6 soft taco tortillas
HOW TO COOK:
1. Preheat an oven to 200°C. Lay the chicken breast on a baking tray and spray or drizzle lightly with canola oil.
2. Coat chicken with MasterFoods™ My Muscle Chef Chipotle Spice Blend and arrange red capsicum around the chicken, sprinkling with additional spice blend if desired. Roast the chicken and capsicum in the oven for 25 minutes.
3. Once done, transfer meat to a tray or plate and let rest for at least 5 minutes before slicing. 4. Lay tortillas out and spread with sour cream, top with shredded raw red cabbage, black beans, capsicum and chicken, and sprinkling with extra Chipotle spice blend before folding and serving
